I discovered a secret with regard to dehydrating potatoes. Cook them a bit first, cool and then slice or dice before putting them on the drying racks. It makes a HUGE difference in the usable result.


Or, slice first, then simmer them a bit till they JUST begin to cook up. Dump off the water, dry them off and then dehydrate them.

Mine is a cheappie electric one. The one I have right now is new and I don't recall the brand name, but I used to use an American Harvest. I had 3 of them and stacks and stacks of racks. I don't have those anymore.

I've seen some instructions for making a box type at an angle with vents so that they can be put into the sun. I always liked that idea as long as there was good air flow in it.

Years ago I used and old station wagon :) It had windows from every angle and I lived in a very dry area. I had window screens..large ones, all through it and it did a good job! I could dry a lOT of food in that car at once! It might take a few days for things to dry, but that was ok...

Crazy you say? Absolutely!

But it worked, and it worked well!

There are some good instructions out there for solar dryers. Basically, that's how that car functioned.
